Ingredients
- 4 cups fresh arugula
- 1 large apple, chopped (Honeycrisp, Fuji, or Granny Smith work great)
- ½ cup walnuts, roughly chopped (lightly toasted for extra flavor)
For the Dijon Vinaigrette:
- 3 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 1 tsp maple syrup or agave (instead of honey, to keep it vegan)
- Pinch of salt (to taste)
(Optional toppings: thinly sliced red onion, or vegan blue cheese crumbles)

Make the Vinaigrette:
In a small bowl, whisk together olive oil, Dijon mustard, apple cider vinegar, maple syrup (or agave), and a pinch of salt until smooth and emulsified. -
Assemble the Salad:
In a large bowl, add arugula, chopped apple, and walnuts. -
Dress & Toss:
