Vegan Apple Walnut Salad with Arugula & Dijon Vinaigrette

Ingredients

  • 4 cups fresh arugula
  • 1 large apple, chopped (Honeycrisp, Fuji, or Granny Smith work great)
  • ½ cup walnuts, roughly chopped (lightly toasted for extra flavor)

For the Dijon Vinaigrette:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 tsp maple syrup or agave (instead of honey, to keep it vegan)
  • Pinch of salt (to taste)

(Optional toppings: thinly sliced red onion, or vegan blue cheese crumbles)


Instructions

  1. Make the Vinaigrette:
    In a small bowl, whisk together olive oil, Dijon mustard, apple cider vinegar, maple syrup (or agave), and a pinch of salt until smooth and emulsified.
  2. Assemble the Salad:
    In a large bowl, add arugula, chopped apple, and walnuts.
  3. Dress & Toss:
    Drizzle the Dijon vinaigrette over the salad. Toss gently until everything is evenly coated.
  4. Serve:
    Transfer to plates or a serving bowl. Add optional toppings (red onion or vegan cheese) if desired.
  5. Enjoy:
    Fresh, crisp, tangy, and nutty — perfect as a side or light main dish!
