Ingredients:

  • 8 oz (225g) penne pasta
  • 2 boneless, skinless chicken breasts, diced
  • 2 cups cherry tomatoes, halved
  • 1/4 cup store-bought or homemade basil pesto
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions:

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced chicken breasts and season with salt and pepper. Cook until the chicken is golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
