– 3 egg yolks, beaten

– 1 pre-baked pie crust

Directions:
1. Mix the brown sugar, cornstarch, and salt in a medium saucepan.
2. Gradually whisk in the milk until smooth.
3. Cook over medium heat, stirring until it thickens and bubbles.
4. Continue to cook and stir for 2 more minutes.
5. Whisk 1/2 cup of the hot mixture into the beaten egg yolks.
6. Pour the egg mixture back into the saucepan and cook for 2 more minutes, stirring.
7. Remove from heat, add butter and vanilla, and mix until combined.
8. Pour the filling into the pie crust.
9. Cool to room temperature, then refrigerate for 4 hours or until set.
10. Add whipped cream if desired before serving.
Note: For a richer flavor, consider using dark brown sugar.
