Ingredients

  • 2 lbs ground beef (80/20 works best)
  • 1½ sleeves buttery crackers (crushed)
  • 1 cup grated Parmesan cheese
  • 2 large eggs
  • 1 cup milk
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning

Optional Topping

  • ½ cup ketchup or marinara
  • 2 tbsp grated Parmesan

Step-by-Step Instructions

  1. Preheat Oven
    Preheat to 350°F (175°C). Lightly grease a large baking dish or line with foil.
  2. Mix the Base
    In a large bowl, combine crushed crackers, Parmesan cheese, milk, and eggs. Let sit for 1–2 minutes so the crackers soften.
  3. Add the Flavor
    Stir in onion, garlic, salt, pepper, and Italian seasoning.
  4. Add the Meat
    Gently mix in the ground beef until just combined. Don’t overmix—this keeps it tender.
  5. Shape & Top
    Form into a large loaf and place in the baking dish. Spread ketchup or marinara on top if using, then sprinkle with extra Parmesan.
  6. Bake
    Bake uncovered for 55–60 minutes, until cooked through and lightly golden.
  7. Rest & Serve
    Let rest for 10 minutes before slicing. This helps it stay juicy.
