6–8 ears of corn (cut in halves, as in the picture)
½ cup mayonnaise
½ cup sour cream (or Greek yogurt)
¼ cup melted butter
½ cup grated Parmesan cheese (or cotija cheese if available)
1 tsp chili powder
½ tsp paprika
1 tsp garlic powder
1 tbsp lime juice (freshly squeezed)
2 tbsp chopped cilantro (optional)
Salt and pepper to taste

Preheat oven: Set to 400°F (200°C).
Prepare the corn: Remove husks and silk. Wash and pat dry. Place corn in a baking pan (like in your photo).
Mix the sauce: In a bowl, combine mayonnaise, sour cream, melted butter, garlic powder, chili powder, paprika, lime juice, salt, and pepper. Mix well until smooth.
Coat the corn: Brush or spoon the sauce generously over each piece of corn so they’re fully covered.
Bake: Cover the pan with foil and bake for 25–30 minutes, or until corn is tender. (If you want a smoky flavor, remove the foil for the last 10 minutes or broil for 2–3 minutes.)
Finish: Sprinkle Parmesan or cotija cheese and cilantro on top before serving. Serve hot with lime wedges on the side. 🍋
