🌽 Creamy Baked Elote-Style Corn

Ingredients

  • 6–8 ears of corn (cut in halves, as in the picture)
  • ½ cup mayonnaise
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup melted butter
  • ½ cup grated Parmesan cheese (or cotija cheese if available)
  • 1 tsp chili powder
  • ½ tsp paprika
  • 1 tsp garlic powder
  • 1 tbsp lime juice (freshly squeezed)
  • 2 tbsp chopped cilantro (optional)
  • Salt and pepper to taste

🔥 Instructions

  1. Preheat oven:
    Set to 400°F (200°C).
  2. Prepare the corn:
    Remove husks and silk. Wash and pat dry.
    Place corn in a baking pan (like in your photo).
  3. Mix the sauce:
    In a bowl, combine mayonnaise, sour cream, melted butter, garlic powder, chili powder, paprika, lime juice, salt, and pepper.
    Mix well until smooth.
  4. Coat the corn:
    Brush or spoon the sauce generously over each piece of corn so they’re fully covered.
  5. Bake:
    Cover the pan with foil and bake for 25–30 minutes, or until corn is tender.
    (If you want a smoky flavor, remove the foil for the last 10 minutes or broil for 2–3 minutes.)
  6. Finish:
    Sprinkle Parmesan or cotija cheese and cilantro on top before serving.
    Serve hot with lime wedges on the side. 🍋
