Ingredients:
1/2 head cauliflower, cut into bite-sized florets
1 1/2 cups panko bread crumbs
3/4 cup finely ground Parmesan cheese
2 large eggs, whisked
Marinara sauce, for dipping
1 tbsp fresh parsley, finely chopped (optional, for garnish)
Directions:
Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Prepare Breading Mixture: In a large bowl, combine the panko bread crumbs and finely ground Parmesan cheese. Mix until thoroughly combined.
Coat Cauliflower: Dip each cauliflower floret into the whisked eggs, allowing any excess egg to drip off. Then roll the floret in the bread crumb mixture until fully coated. Place the coated cauliflower on the prepared baking sheet. You may need to press the bread crumb mixture onto the cauliflower to ensure it sticks well. Repeat until all cauliflower florets are coated.
Bake: Bake in the preheated oven for 20-25 minutes, or until the coating is a dark golden brown and crunchy.
Garnish and Serve: Sprinkle with fresh parsley if desired. Serve immediately with marinara sauce for dipping. Enjoy!
