Ingredients:
For the Cookies:
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 tablespoon fresh lemon juice
Zest of 1 lemon
1 3/4 cups all-purpose flour
1/4 cup cornstarch
1/4 teaspoon salt
For the Lemon Glaze:
1 cup powdered sugar
2-3 tablespoons fresh lemon juice
Zest of 1 lemon (optional, for extra flavor)
Directions:
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the softened butter and powdered sugar until smooth and creamy.
Add the lemon juice and lemon zest, and mix until well combined.
In a separate bowl, whisk together the flour, cornstarch, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Roll the dough into 1-inch balls and place them on the prepared baking sheet, flattening each ball slightly with the palm of your hand.
Bake for 12-15 minutes, or until the edges are just beginning to turn golden. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
While the cookies are cooling, prepare the lemon glaze by whisking together the powdered sugar and fresh lemon juice until smooth. Add lemon zest if desired for extra flavor.
Once the cookies are completely cool, drizzle the lemon glaze over the tops or dip each cookie into the glaze.
Allow the glaze to set before serving.
