Garden Zucchini Casserole

Ingredients:

  • 1/2 cup chopped onion
  • 1 tablespoon olive oil or butter
  • 1/2 teaspoon garlic powder
  • 4 cups zucchini, sliced or chopped
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup breadcrumbs (optional)
  • Salt and pepper, to taste

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil or butter over medium heat. Sauté the onion until soft and translucent, about 3–4 minutes.
  3. Add zucchini and garlic powder, cooking for 5–6 minutes until slightly softened. Season with salt and pepper.
  4. Transfer the zucchini mixture to a greased baking dish. Top with shredded cheese and/or breadcrumbs if using.
  5. Bake for 20–25 minutes, until the cheese is melted and golden or breadcrumbs are crispy.
  6. Serve hot as a side dish or a light vegetarian main.

Tips:

  • For extra flavor, sprinkle with fresh herbs like thyme or parsley before baking.
  • You can add diced tomatoes or bell peppers for a more colorful casserole.
  • For a lighter version, skip the cheese or use a low-fat alternative.
