Ingredients:
- 1/2 cup chopped onion
- 1 tablespoon olive oil or butter
- 1/2 teaspoon garlic powder
- 4 cups zucchini, sliced or chopped
- 1/2 cup shredded cheese (optional)
- 1/4 cup breadcrumbs (optional)
- Salt and pepper, to taste
Instructions:
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil or butter over medium heat. Sauté the onion until soft and translucent, about 3–4 minutes.
- Add zucchini and garlic powder, cooking for 5–6 minutes until slightly softened. Season with salt and pepper.
- Transfer the zucchini mixture to a greased baking dish. Top with shredded cheese and/or breadcrumbs if using.
- Bake for 20–25 minutes, until the cheese is melted and golden or breadcrumbs are crispy.
- Serve hot as a side dish or a light vegetarian main.
