4 Large tomatoes
1 lb. Ground beef (lean)
1 Packet taco seasoning
1 med onion chopped
4 C. lettuce
½ C. Corn (optional)
½ C. Cheddar cheese shredded
Sour Cream to taste
Parsley for garnish
Preheat the oven to 375 degrees.
Add the ground beef and onions to a skillet over medium-high heat on the stove. Saute until the onions have softened and the beef is completely browned. Drain any remaining grease.
Mix in the taco seasoning and corn.
Slice the top of the tomatoes off, remove the center of the tomato and spoon out the inside.
Fill the tomatoes with the taco mixture and sprinkle with cheese on top.
Bake for 15 minutes.
Garnish with chopped lettuce, sour cream, extra cheese if you want, parsley and serve.
