Ingredients:

  • 1 1/2 pounds lean ground beef (at least 90% lean)
  • 1 cup old-fashioned oats, uncooked
  • 1 cup skim milk
  • 1 large egg
  • 1 medium onion, finely chopped
  • 1 bell pepper (any color), finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup ketchup (plus extra for topping)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Meatloaf Mixture:
    • In a large mixing bowl, combine ground beef, oats, skim milk, egg, chopped onion, chopped bell pepper, minced garlic, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and pepper.
    • Mix the ingredients thoroughly until well combined.
  3. Shape the Meatloaf:
    • Transfer the meatloaf mixture to a lightly greased loaf pan or shape it into a loaf on a baking sheet.
  4. Top with Ketchup:
    • Spread a thin layer of ketchup on top of the meatloaf for added flavor.
  5. Bake:
    • Place the meatloaf in the preheated oven and bake for approximately 1 hour or until the internal temperature reaches 160°F (71°C).
  6. Rest and Slice:
    • Allow the meatloaf to rest for a few minutes before slicing.
