1 lb ground chicken sausage
1 diced bell pepper
1 diced onion
1 cup sliced mushrooms
1 cup spinach
8 large eggs
1/2 cup milk
1 cup shredded cheese
Salt and pepper to taste
Preheat Oven: 350°F (175°C).
Cook Sausage: Brown the chicken sausage in a skillet.
Sauté Vegetables: Add bell pepper, onion, mushrooms, and spinach. Cook until soft.
Mix Eggs: Beat eggs with milk, salt, and pepper.
Assemble Casserole: In a baking dish, layer sausage and vegetables. Pour egg mixture over, top with cheese.
Bake: 30-35 minutes until set.
