Ingredients:
4 salmon fillets
250ml skimmed milk
25g margarine (suitable for cooking)
25g plain flour
½ lemon, juice only
Black pepper (optional)
Instructions:
Place salmon in a microwave-safe dish, pour over milk.
Cover with cling film, leaving a small area open.
Microwave on full power for 3 minutes, turn fish, cook 1 more minute.
Melt margarine in a microwave-safe jug for 30 seconds.
Add flour, whisk to blend.
Gradually add milk, whisking until smooth.
Microwave sauce for 3-4 minutes, whisking at 1-minute intervals.
Add lemon juice and pepper to sauce, whisk.
Pour sauce over salmon or serve separately.
