Ingredients:

Instructions:
- Preheat the oven to 400°F (200°C).
- Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the rounds in a single layer on a baking sheet lined with parchment paper.
- Roast for 25–30 minutes, flipping halfway through, until golden and tender.
- Remove from the oven and drizzle with honey, then sprinkle with crumbled feta.
- Garnish with fresh parsley and serve warm. Add a dollop of Greek yogurt on the side if desired.
