Roasted Sweet Potato Rounds with Honey & Feta

Ingredients:

Sweet Potato Rounds:

  • 2 large sweet potatoes, peeled and sliced into ½-inch thick rounds
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Topping:

  • 2 tbsp honey
  • ½ cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)

Optional:

  • Serve with a dollop of Greek yogurt on the side for extra creaminess

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange the rounds in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 25–30 minutes, flipping halfway through, until golden and tender.
  5. Remove from the oven and drizzle with honey, then sprinkle with crumbled feta.
  6. Garnish with fresh parsley and serve warm. Add a dollop of Greek yogurt on the side if desired.

  • For extra flavor, sprinkle a pinch of smoked paprika or cinnamon before roasting.
