🧂 Ingredients (Serves 2–3):

  • 1½ lbs (680g) potatoes, diced into ½” cubes (Free)
  • 2–3 reduced-fat sausages, sliced (e.g., Heck Chicken Sausages – 0.5 syns each or less)
  • ½ large red bell pepper, sliced (Speed)
  • ½ large green bell pepper, sliced (Speed)
  • 1 medium onion, sliced (optional but great for flavor – Speed)
  • ½ tsp Italian seasoning (Free)
  • ½ tsp seasoned salt or garlic salt, or to taste (Free)
  • Low-calorie cooking spray (Frylight or similar)

👩‍🍳 Instructions:

  1. Boil the potatoes for 5–7 minutes until slightly tender (not fully cooked). Drain and let steam dry for 2–3 minutes.
  2. Spray a large non-stick frying pan with low-calorie spray and heat over medium heat.
  3. Add the sliced sausage and onion (if using), and fry until browned (about 5–6 minutes). Remove and set aside.
  4. Re-spray the pan, then add potatoes. Cook over medium heat for 10–15 minutes, flipping occasionally until golden and crisp.
  5. Add peppers, sausage, and onion back to the pan.
  6. Sprinkle with seasoned salt and Italian seasoning.
  7. Cook for another 5–7 minutes, until everything is browned and cooked through.
