🧁 Ingredients (Makes 8–10 muffins):
- 100g fat-free natural Greek yogurt
- 2 large eggs
- 2 tbsp cocoa powder (unsweetened – 1 syn per tbsp) ➜ 2 syns
- 2 tbsp self-raising flour ➜ 2 syns
- 3 tbsp granulated sweetener (or to taste – syn-free if it’s a SW-friendly blend)
- ½ tsp baking powder
- 1 tsp vanilla extract
- Optional: 25g dark chocolate chips (around 6 syns total) ➜ adds gooeyness!
👩🍳 Instructions:
- Preheat oven to 180°C / 160°C fan / 350°F and line a muffin tray with paper cases.
- In a bowl, mix together the Greek yogurt, eggs, sweetener, and vanilla until smooth.
- In a separate bowl, mix flour, cocoa powder, baking powder.
- Combine wet and dry ingredients — don’t overmix.
- Stir in chocolate chips if using.
- Spoon into muffin cases (makes 8–10).
- Bake for 13–15 minutes, until tops are firm but insides are still slightly gooey.
- Let them cool for a few minutes in the tin for structure.
