Slimming World–Friendly Brownie Muffins

Crispy on the outside, gooey inside — and around 1–2 syns each!


🧁 Ingredients (Makes 8–10 muffins):

  • 100g fat-free natural Greek yogurt
  • 2 large eggs
  • 2 tbsp cocoa powder (unsweetened – 1 syn per tbsp) ➜ 2 syns
  • 2 tbsp self-raising flour2 syns
  • 3 tbsp granulated sweetener (or to taste – syn-free if it’s a SW-friendly blend)
  • ½ tsp baking powder
  • 1 tsp vanilla extract
  • Optional: 25g dark chocolate chips (around 6 syns total) ➜ adds gooeyness!

👩‍🍳 Instructions:

  1. Preheat oven to 180°C / 160°C fan / 350°F and line a muffin tray with paper cases.
  2. In a bowl, mix together the Greek yogurt, eggs, sweetener, and vanilla until smooth.
  3. In a separate bowl, mix flour, cocoa powder, baking powder.
  4. Combine wet and dry ingredients — don’t overmix.
  5. Stir in chocolate chips if using.
  6. Spoon into muffin cases (makes 8–10).
  7. Bake for 13–15 minutes, until tops are firm but insides are still slightly gooey.
  8. Let them cool for a few minutes in the tin for structure.

  • Cocoa (2 syns)
  • Flour (2 syns)
  • Optional choc chips (6 syns total)
  • ➤ With choc chips: ~1 syn per muffin
  • ➤ Without choc chips: ~0.4 syns per muffin (yes, really!)

🔁 Variations:

  • Add a tsp of peanut butter in the center before baking (1 syn)
  • Use flavored yogurt (check for added syns!)
  • Sprinkle with instant coffee to enhance chocolate flavor (free!)
