Ingredients

  • 3 eggs
  • 1 cup (240 ml) milk (or almond milk for low-carb)
  • 2 tablespoons flax seeds (whole or ground)
  • 2 tablespoons psyllium husk
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • Optional:
    • 1 tbsp olive oil or melted butter (moisture)
    • Herbs (oregano, thyme)
    • Garlic powder
    • Sesame seeds

Instructions

1. Prepare the Jar

Use a microwave-safe glass jar or mug.
Lightly grease with oil or butter.


2. Mix the Batter

In a bowl, whisk together:

  • 3 eggs
  • milk
  • flax seeds
  • psyllium
  • baking powder
  • salt
  • (Optional oil + herbs)

Let the mixture sit 2–3 minutes so the psyllium thickens.


3. Microwave

Pour batter into the jar.

Microwave 1–2 minutes depending on power:

  • 1,000W → about 1 minute 20 seconds
  • 800W → about 1 minute 40–50 seconds

Bread should rise and become firm.


4. Serve

Remove from jar, slice, and enjoy!

You can toast the slices for extra crispiness.
