Ingredients:

  • 2 cups frozen pineapple chunks – 0 points
  • ½ cup unsweetened almond milk – 0 points
  • ½ cup non-fat Greek yogurt – 0 points
  • 1 tbsp honey or sugar substitute – 1 point (optional)
  • ½ tsp vanilla extract – 0 points

Instructions:

  1. Place frozen pineapple chunks in a high-speed blender or food processor.
  2. Add almond milk, Greek yogurt, vanilla, and honey (if using).
  3. Blend until smooth, creamy, and ice-cream-like in texture.
    • Scrape down sides as needed.
  4. Serve immediately for a soft-serve texture, or freeze 1–2 hours for a firmer scoop.
