For the chicken:
– 300g chicken breast
– 1 tsp garlic granules
– 1 tsp Italian herbs
– 1 tsp onion granules
– Salt & pepper
For the sauce:
– 100ml chicken stock
– 100g @philadelphia_uki light
– 1 tsp lazy garlic
– 1 tsp oregano
– 40g parmesan
– (Cornflour to thicken ONLY if required)
For the potatoes:
– 400g potatoes
– 1 tbsp Cajun
– Salt and pepper
– Drizzle of olive oil
Tender-stem broccoli, to serve
Method:
1. Peel, quarter, and dice your potatoes into small cubes. Toss them in a drizzle of oil, then season with salt, pepper, and Cajun spice. Pop them into the air fryer basket and cook at 200°C for 20 minutes, shaking halfway through. �
2. Meanwhile, lightly spray a pan with low-calorie cooking spray and add your chicken. Season with salt, pepper, Italian herbs, and onion granules. �
3. Once the chicken is cooked through, stir in the garlic purée, Philadelphia, chicken stock, and grated Parmesan. Mix well until the sauce thickens. If it needs a little help, stir in a touch of cornflour to reach your desired consistency. �
4. Serve up your creamy chicken with the crispy air-fried potatoes and some tenderstem broccoli for a tasty, balanced meal.
