Ingredients

  • 1 ยฝ cups all-purpose flour
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • ยผ tsp salt
  • ยฝ cup unsalted butter (softened)
  • ยพ cup sugar (or ยฝ cup honey/maple syrup for natural sweetener)
  • 2 large eggs
  • 1 tsp vanilla extract
  • ยฝ cup milk (or almond milk)
  • ยฝ cup raisins (soaked in warm water for 10 mins & drained)
  • ยผ cup chopped dried fruit (optional: apricots, cranberries)
  • ยผ cup sliced almonds (for topping)

Instructions

  1. Preheat Oven: Set oven to 350ยฐF (175ยฐC). Line a loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Cream Butter & Sugar: In another large bowl, beat butter and sugar until light and fluffy.
  4. Add Eggs & Vanilla: Beat in eggs one at a time, then stir in vanilla extract.
  5. Combine: Alternate adding flour mixture and milk into the wet mixture, mixing gently until combined.
  6. Fold in Raisins: Gently stir in raisins (and optional dried fruits).
  7. Bake: Pour batter into prepared loaf pan. Sprinkle sliced almonds on top. Bake for 45โ€“55 minutes, until a toothpick inserted in center comes out clean.
  8. Cool & Serve: Let cool for 10 minutes in pan, then transfer to wire rack. Slice and enjoy.
