Apple Oatmeal Raisin Cake
This cake has become a beloved staple in our home, a delightful treat that feels indulgent yet is packed with wholesome ingredients. The kids love the sweetness of the apples and raisins, while I appreciate that it’s sugar-free and healthy enough for breakfast or a snack!
Ingredients:
2 medium apples, grated (with skin)
1 cup rolled oats
1/2 cup raisins
2 eggs
1/2 cup plain yogurt (can be unsweetened)
1 teaspoon ground cinnamon
1 teaspoon baking powder
1/2 teaspoon vanilla extract (optional)
Instructions:
1. Preheat the oven to 180°C (350°F) and grease a cake pan.
2. In a large bowl, mix the grated apples with the eggs and yogurt. Beat well until smooth.
3. Add the cinnamon, baking powder, and vanilla extract. Mix again until fully incorporated.
4. Stir in the rolled oats and raisins, ensuring everything is well combined.
5. Pour the mixture into the greased pan and smooth the top with a spatula.
6. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the cake to cool in the pan for a few minutes before carefully removing it.
