  • 1 cup (200 g) granulated sugar
  • ½ cup (115 g) unsalted butter, melted
  • 1 cup (240 ml) milk
  • 2 large eggs
  • 2 tsp baking powder
  • 1 tsp vanilla extract

  • 2 tbsp brown sugar
  • 1 tsp ground cinnamon
  • 1 tbsp lemon juice

Optional Toppings

  • Powdered sugar (for dusting)
  • Whipped cream or vanilla ice cream

Instructions

  1. Prepare the apples
Peel and dice the apples into small cubes. In a bowl, mix the apples with brown sugar, cinnamon, and lemon juice. Set aside.
  2. Preheat & prepare the pan
Preheat the oven to 350°F (175°C). Grease a 9-inch (23 cm) round cake pan.
  3. Make the cake batter
In a large bowl, whisk the eggs and granulated sugar until smooth.
Add melted butter and vanilla extract and mix well.
    Stir in the milk.
  4. Combine dry ingredients
In a separate bowl, mix the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture and stir until smooth and lump-free.
  5. Assemble the cake
Pour half of the batter into the prepared pan.
Spread the apple mixture evenly over the batter.
Pour the remaining batter on top and gently smooth the surface.
  6. Bake
Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool & serve
Let the cake cool for about 20 minutes. Dust with powdered sugar and serve warm with whipped cream or ice cream.

Additional Notes

  • Best Apples: Granny Smith or Honeycrisp work great for balance and texture.
  • Storage: Store covered at room temperature for up to 2 days or refrigerate for 4–5 days.
  • Make Ahead: Tastes even better the next day once the flavors settle.

Variations

  • Extra Spice: Add a pinch of nutmeg or allspice to the apple filling.
  • Crumb Topping: Sprinkle a simple streusel on top before baking for extra crunch.
  • Dairy-Free: Use plant-based milk and dairy-free butter.
