Moms Homemade Buns 57 Recipe

Servings: 4 individual cups
Prep Time: 10 minutes
Cook Time: 35–40 minutes
Total Time: ~50 minutes

Ingredients

Main Ingredients

  • 1½ cups (360 g) full-fat cottage cheese
  • 4 large eggs, room temperature
  • 1 cup (90 g) old-fashioned rolled oats (not quick oats)
  • 1 ripe banana

Sweetener & Leavening

  • ⅓ cup (80 ml) maple syrup (or honey)
  • 1 tsp baking soda

Topping

  • 1 cup (150 g) fresh blueberries (frozen works too)

Instructions

  1. Preheat the oven
    Preheat oven to 350°F (180°C).
Lightly spray four 2-cup oven-safe bowls with non-stick spray and place them on a baking sheet.
  2. Blend the batter
Add cottage cheese, eggs, rolled oats, banana, maple syrup, and baking soda to a high-speed blender.
Blend until smooth. If the batter feels too thick, add a small splash of milk to loosen it.
  3. Fill the bowls
Pour the batter evenly into the prepared bowls, filling each about ⅔ full.
  4. Add blueberries
Sprinkle blueberries on top, gently pressing a few into the batter.
  5. Bake
Bake for 35–40 minutes, checking at 35 minutes.
The tops should be lightly golden and firm to the touch.
  6. Cool & enjoy
Let cool for at least 10 minutes before eating. They firm up as they cool.

Additional Notes

  • Texture Tip: Full-fat cottage cheese gives the creamiest result, but low-fat works too.
  • Sweetness Level: Naturally sweet, not overly sugary—perfect for breakfast or snack.
  • Protein Boost: Add 1–2 tablespoons vanilla protein powder to the blender if desired.

Storage & Meal Prep

  • Store covered in the fridge for up to 4 days.
  • Reheat gently in the microwave or enjoy cold.

Variations

  • Fruit Swap: Use strawberries, raspberries, or chopped apples instead of blueberries.
  • Honey Version: Replace maple syrup with honey.
  • Spiced: Add cinnamon or lemon zest for extra flavor.
