Ingredients:
- 4 salmon fillets
- 2 tablespoons olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano or thyme
- Salt and pepper, to taste
- Lemon wedges, for serving
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and drizzle with olive oil. Season with salt, pepper, and oregano/thyme.
- In a small bowl, mix feta, sun-dried tomatoes, and garlic. Spread this mixture evenly over the top of each salmon fillet.
- Bake for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with fresh parsley and serve with lemon wedges on the side.
