Baked Salmon with Feta & Sun-Dried Tomatoes

Ingredients:

  • 4 salmon fillets
  • 2 tablespoons olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano or thyme
  • Salt and pepper, to taste
  • Lemon wedges, for serving
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the salmon fillets on the baking sheet and drizzle with olive oil. Season with salt, pepper, and oregano/thyme.
  3. In a small bowl, mix feta, sun-dried tomatoes, and garlic. Spread this mixture evenly over the top of each salmon fillet.
  4. Bake for 12–15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. Garnish with fresh parsley and serve with lemon wedges on the side.
