I made this because I wanted something warm and cozy… not because I needed 12 points worth of nuts and butter And somehow this still gives full crumble vibes.
Ultra Low-Point Version (Same Crumbly Top )
- 1 cup blueberries (or strawberries for even lower carbs) – 0 points
- 1 tbsp monk fruit sweetener – 0 points
- 1 tbsp oat flour (instead of almond flour) – 1 point
- 1 tsp light butter (instead of 1 tbsp) – 1 point
- 1 tbsp finely chopped pecans (not ¼ cup ) – 1 point
- ½ tsp cinnamon – 0
- ½ tsp vanilla – 0
- Pinch salt – 0
Optional:
- 2 tbsp light whipped topping – 1 point
How To
Divide berries into two oven-safe ramekins.
Mix in sweetener (½ tbsp per ramekin).
In a small bowl mix oat flour, light butter, pecans, cinnamon, vanilla, and salt.
Sprinkle half the crumble mixture over each ramekin.
Bake at 400°F for 15–18 minutes until bubbly and golden.
Let cool slightly (it thickens as it cools).
Add a little light whipped topping if you want.
It still gets that golden, slightly crunchy top.
