1. Prepare the filling

  • In a medium bowl, beat the softened cream cheese until smooth and creamy.
  • Add honey (or maple syrup), vanilla extract, and lemon zest if using.
  • Mix well until light and fluffy.

2. Assemble the quesadillas

  • Lay a tortilla flat on a clean surface.
  • Spread about 2 tablespoons of the cream cheese mixture over half of the tortilla.
  • Scatter ¼ cup of blueberries evenly over the cream cheese layer.
  • Fold the tortilla in half to create a semicircle and press gently to seal.
  • Repeat with the remaining tortillas and filling.

3. Cook the quesadillas

  • Heat a nonstick skillet or griddle over medium heat and melt a little butter.
  • Place one or two folded tortillas in the pan (depending on size).
  • Cook for 2–3 minutes per side, or until golden brown and lightly crisp, and the filling is warm inside.
  • Transfer to a cutting board and let rest for 1–2 minutes before slicing into wedges.

4. Serve and enjoy

  • Dust with powdered sugar for a bakery-style finish.
  • Drizzle with honey or maple syrup.
