🛒 Ingredients (Serves 4–6)
- 1½ cups cottage cheese (small curd works best)
- 2 large eggs
- ¼ cup honey or maple syrup (adjust to taste)
- 1 tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup oats (or almond flour for low-carb)
- 1½ cups fresh or frozen blueberries
- 1 tsp lemon zest (optional but amazing)
- ½ tsp baking powder

- Preheat oven to 350°F (175°C). Lightly grease small ramekins or a baking dish.

Blend base
In a bowl (or blender for ultra-smooth texture), mix cottage cheese, eggs, honey, vanilla, cinnamon, salt, and baking powder. - Fold in oats (or almond flour).

Spoon batter into ramekins and gently press blueberries into the top (leave some visible like in the photo). -
