🛒 Ingredients (Serves 4–6)

  • 1½ cups cottage cheese (small curd works best)
  • 2 large eggs
  • ¼ cup honey or maple syrup (adjust to taste)
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ¼ tsp salt
  • ½ cup oats (or almond flour for low-carb)
  • 1½ cups fresh or frozen blueberries
  • 1 tsp lemon zest (optional but amazing)
  • ½ tsp baking powder

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease small ramekins or a baking dish.
  2. Blend base
    In a bowl (or blender for ultra-smooth texture), mix cottage cheese, eggs, honey, vanilla, cinnamon, salt, and baking powder.
  3. Fold in oats (or almond flour).
  4. Layer blueberries
    Spoon batter into ramekins and gently press blueberries into the top (leave some visible like in the photo).
  5. Bake
    Bake 30–35 minutes, until the center is set and the top is lightly golden.
  6. Rest 5 minutes before serving—texture firms up beautifully.
