Ingredients
2 cups broccoli florets
2 cups cauliflower florets
1 cup cottage cheese
1 cup shredded cheddar cheese, divided
2 large eggs
1/4 cup grated Parmesan cheese
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt

Instructions
1. Preheat oven to 375°F and grease a 9×9-inch baking dish.
2. Steam or microwave broccoli and cauliflower 3–4 minutes until tender.
3. In a large bowl, mix cottage cheese, eggs, garlic powder, onion powder, salt, and pepper.
4. Add half the cheddar and all the vegetables; stir to combine.
5. Pour mixture into dish and sprinkle with remaining cheddar and Parmesan.
6. Bake 30–35 minutes until golden and bubbly.
7. Cool for 5 minutes before serving.
Notes
Drain veggies well to avoid extra moisture.
Use full-fat cottage cheese for creaminess.
Add cooked bacon or chicken for extra protein.
Store leftovers up to 4 days or freeze for 2 months.
