🍅 Bruschetta Phyllo Cups

Crispy phyllo cups filled with a fresh, juicy bruschetta topping and finished with creamy feta. Perfect for parties, holidays, or an easy appetizer that looks impressive with minimal effort.


🧺 Ingredients

  • 12 phyllo cups (store-bought or homemade)
  • 2 medium tomatoes, diced
  • ¼ cup red onion, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • ¼ cup feta cheese, crumbled
  • Salt & black pepper, to taste

👩‍🍳 Instructions

  1. Preheat (if needed)
    Preheat oven to 180°C (350°F). Place phyllo cups on a baking sheet and warm for 3–5 minutes until crisp. Let cool slightly.
  2. Prepare the bruschetta topping
    In a bowl, combine diced tomatoes, red onion, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Gently mix.
  3. Fill the cups
    Spoon the tomato mixture evenly into each phyllo cup.
  4. Add feta
    Sprinkle crumbled feta cheese over the top of each cup.
  5. Serve
    Serve immediately for maximum crispiness, or chill briefly before serving.
