🧺 Ingredients
- 12 phyllo cups (store-bought or homemade)
- 2 medium tomatoes, diced
- ¼ cup red onion, finely chopped
- 2 tablespoons fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- ¼ cup feta cheese, crumbled
- Salt & black pepper, to taste

Preheat (if needed)
Preheat oven to 180°C (350°F). Place phyllo cups on a baking sheet and warm for 3–5 minutes until crisp. Let cool slightly. -
Prepare the bruschetta topping
In a bowl, combine diced tomatoes, red onion, chopped basil, balsamic vinegar, olive oil, salt, and pepper. Gently mix. -
Fill the cups
Spoon the tomato mixture evenly into each phyllo cup. -
Add feta
Sprinkle crumbled feta cheese over the top of each cup. -
Serve
