🛒 Ingredients
- 1 lb large shrimp, peeled and deveined
- Kosher salt & fresh cracked black pepper, to taste
- 1 tsp Cajun seasoning (or Creole seasoning)
- ½ tsp dried oregano
- 2 tbsp olive oil
- 6 oz andouille or smoked sausage, thinly sliced
- 10 oz fettuccine pasta
- ½ yellow onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 4 tsp Cajun seasoning
- 1 tsp brown sugar
- 2–3 cloves garlic, chopped
- ½ cup crushed tomatoes
- 1 cup sodium-free chicken broth
- 1 cup heavy cream
- ⅔ cup grated Parmesan cheese
- 1 tbsp chopped parsley (for garnish)
👩🍳 Instructions
- Season Shrimp:
Toss shrimp with salt, pepper, 1 tsp Cajun seasoning, and oregano. Coat well. - Cook Shrimp:
In a large skillet over medium-high heat, drizzle olive oil and add shrimp. Cook for 2 minutes per side, until just pink. Remove to a plate. - Cook Sausage:
Add more olive oil if needed. Sauté sliced sausage until caramelized (4–5 minutes). Remove and set aside. - Cook Pasta:
While sausage cooks, boil salted water and cook fettuccine until al dente. Drain and set aside. - Sauté Veggies:
Lower skillet heat to medium. Add more oil, onions, bell peppers, 4 tsp Cajun seasoning, brown sugar, and a generous pinch of salt. Cook until soft. Add garlic and sauté 30 seconds. - Build the Sauce:
Pour in crushed tomatoes, chicken broth, and cream. Stir and simmer for a couple minutes, scraping up any browned bits. - Add Cheese & Combine:
Stir in Parmesan until smooth. Add pasta and sausage back to the pan, toss to coat and heat through (2–3 minutes). Taste and adjust seasoning. - Finish with Shrimp:
Return shrimp to the pan just to warm through. - Serve:
Garnish with chopped parsley and dive in!

- Use linguine or penne if you don’t have fettuccine.
- Want it spicier? Add extra Cajun seasoning or a pinch of cayenne.
