🛒 Ingredients

  • 1 lb large shrimp, peeled and deveined
  • Kosher salt & fresh cracked black pepper, to taste
  • 1 tsp Cajun seasoning (or Creole seasoning)
  • ½ tsp dried oregano
  • 2 tbsp olive oil
  • 6 oz andouille or smoked sausage, thinly sliced
  • 10 oz fettuccine pasta
  • ½ yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 4 tsp Cajun seasoning
  • 1 tsp brown sugar
  • 2–3 cloves garlic, chopped
  • ½ cup crushed tomatoes
  • 1 cup sodium-free chicken broth
  • 1 cup heavy cream
  • ⅔ cup grated Parmesan cheese
  • 1 tbsp chopped parsley (for garnish)

👩‍🍳 Instructions

  1. Season Shrimp:
    Toss shrimp with salt, pepper, 1 tsp Cajun seasoning, and oregano. Coat well.
  2. Cook Shrimp:
    In a large skillet over medium-high heat, drizzle olive oil and add shrimp. Cook for 2 minutes per side, until just pink. Remove to a plate.
  3. Cook Sausage:
    Add more olive oil if needed. Sauté sliced sausage until caramelized (4–5 minutes). Remove and set aside.
  4. Cook Pasta:
    While sausage cooks, boil salted water and cook fettuccine until al dente. Drain and set aside.
  5. Sauté Veggies:
    Lower skillet heat to medium. Add more oil, onions, bell peppers, 4 tsp Cajun seasoning, brown sugar, and a generous pinch of salt. Cook until soft. Add garlic and sauté 30 seconds.
  6. Build the Sauce:
    Pour in crushed tomatoes, chicken broth, and cream. Stir and simmer for a couple minutes, scraping up any browned bits.
  7. Add Cheese & Combine:
    Stir in Parmesan until smooth. Add pasta and sausage back to the pan, toss to coat and heat through (2–3 minutes). Taste and adjust seasoning.
  8. Finish with Shrimp:
    Return shrimp to the pan just to warm through.
  9. Serve:
    Garnish with chopped parsley and dive in!

💡 Pro Tips

  • Use linguine or penne if you don’t have fettuccine.
  • Want it spicier? Add extra Cajun seasoning or a pinch of cayenne.
  • Make it a one-pot meal by boiling pasta first, draining, then using the same pot for the sauce.
