  • Salt & pepper, to taste
  • ¼ cup crumbled goat cheese
  • ¼ cup chopped toasted walnuts
  • Fresh thyme or rosemary, for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Peel and slice sweet potatoes into ½-inch rounds. Toss in olive oil, cinnamon, salt, and pepper.
  3. Lay slices in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and caramelized.
  4. Transfer roasted sweet potatoes to a serving platter.
  5. Drizzle with honey while still warm.
