Ingredients
- 2 medium sweet potatoes, peeled and sliced into ½-inch rounds

- ¼ cup crumbled goat cheese
- ¼ cup chopped toasted walnuts

Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Peel and slice sweet potatoes into ½-inch rounds. Toss in olive oil, cinnamon, salt, and pepper.
- Lay slices in a single layer on the baking sheet. Roast for 25–30 minutes, flipping halfway, until golden and caramelized.
