Ingredients
For the Cake:
- 4 large eggs
- 3/4 cup granulated sugar

Instructions
1. Prepare the Cake
- Preheat oven to 350ยฐF (175ยฐC).
- Line a 10ร15-inch jelly roll pan with parchment paper and lightly grease.
- In a large bowl, beat eggs with granulated and brown sugar until pale and fluffy.
- Add vegetable oil and vanilla extract, mixing until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Gently fold the dry ingredients into the wet mixture.
- Fold in grated carrots and nuts (if using).
2. Bake the Cake
- Pour batter into prepared pan and spread evenly.
- Bake for 15โ18 minutes until the cake springs back when lightly touched.
- While cake bakes, lay a clean kitchen towel on a flat surface and sprinkle generously with powdered sugar.
3. Roll the Cake
- Once cake is done, immediately loosen edges and invert onto the prepared towel.
- Carefully peel off parchment paper.
- Starting from a short edge, roll the cake with the towel inside and let it cool completely.
4. Prepare the Filling
- In a bowl, beat cream cheese and butter until smooth.
- Add powdered sugar and vanilla extract, mixing until creamy and fluffy.
5. Assemble the Cake Roll
- Unroll the cooled cake gently.
- Spread cream cheese filling evenly over the surface.
- Re-roll the cake without the towel, tucking in ends.
- Chill for at least 30 minutes before serving.
6. Serve
- Dust with powdered sugar or drizzle with extra cream cheese frosting if desired.
- Slice with a sharp knife to prevent cracking.
