Ingredients

For the Cake:

  • 4 large eggs

Instructions

1. Prepare the Cake

  1. Preheat oven to 350ยฐF (175ยฐC).
  2. Line a 10ร—15-inch jelly roll pan with parchment paper and lightly grease.
  3. In a large bowl, beat eggs with granulated and brown sugar until pale and fluffy.
  4. Add vegetable oil and vanilla extract, mixing until combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  6. Gently fold the dry ingredients into the wet mixture.
  7. Fold in grated carrots and nuts (if using).

2. Bake the Cake

  3. While cake bakes, lay a clean kitchen towel on a flat surface and sprinkle generously with powdered sugar.

3. Roll the Cake

4. Prepare the Filling

  1. In a bowl, beat cream cheese and butter until smooth.

5. Assemble the Cake Roll

  1. Unroll the cooled cake gently.
  2. Spread cream cheese filling evenly over the surface.
  3. Re-roll the cake without the towel, tucking in ends.
  4. Chill for at least 30 minutes before serving.

  • Dust with powdered sugar or drizzle with extra cream cheese frosting if desired.
