4 cups shredded mozzarella cheese

8 low-carb tortillas (8-inch diameter)

½ cup pizza sauce

Steps
Set a large nonstick skillet over medium-high heat and allow it to warm thoroughly.
Sprinkle ½ cup of shredded mozzarella cheese evenly in the center of the skillet and let it melt undisturbed until bubbling.
Once the cheese is melted and bubbling, gently place one tortilla over the cheese and press lightly to make it stick.
Using a wide spatula, flip the tortilla so the cheese side is facing up. Spread about 1 tablespoon pizza sauce in the center, then arrange 6 slices of pepperoni over the sauce.
Carefully roll the tortilla from one side to the other while still warm, keeping the cheese, sauce, and pepperoni inside.
Repeat the process with remaining ingredients to make additional roll-ups.
