Cheesy Zucchini Roll-Ups Recipe

Delicious and easy to make, these Cheesy Zucchini Roll-Ups filled with turkey bacon are the perfect comfort food!

Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 4 slices turkey bacon
  • 1 egg
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin slices.
  3. In a bowl, mix the ricotta, mozzarella, Parmesan, egg, Italian seasoning, salt, and pepper.
  4. In a skillet, cook the turkey bacon until crispy, then chop into small pieces.
