Ingredients:
500g potatoes, peeled and chopped
250g cooked chicken, shredded
1/2 cup grated cheese (cheddar or your choice)
1/4 cup finely chopped spring onions
2 eggs
1/2 cup plain flour
1 cup panko breadcrumbs
Salt and pepper, to taste
Vegetable oil, for frying
Instructions:
Prepare the Potatoes:
Cook the chopped potatoes in a large pot of boiling salted water for about 15 minutes, or until tender. Drain well and mash until smooth. Allow to cool slightly.
Make the Croquette Mixture:
In a large bowl, combine the mashed potatoes, shredded chicken, grated cheese, and finely chopped spring onions. Season with salt and pepper to taste. Beat one of the eggs and add it to the mixture, mixing well until all ingredients are thoroughly combined.
Shape the Croquettes:
Using your hands, shape the mixture into small, oval-shaped croquettes.
Prepare for Frying:
Place the flour, beaten egg, and panko breadcrumbs into three separate shallow bowls. Roll each croquette in the flour, shaking off any excess. Then dip into the beaten egg, allowing any excess to drip off, and finally coat in the panko breadcrumbs.
Fry the Croquettes:
Heat the vegetable oil in a large frying pan over medium-high heat. Fry the croquettes in batches, turning occasionally, for about 3-4 minutes, or until golden brown and crispy on all sides. Drain the croquettes on paper towels to remove any excess oil.
Serve:
Serve the chicken potato croquettes immediately, with your favorite dipping sauce.
