  • 1 tsp vanilla extract
  • 1 egg
  • 1 ½ cups (180g) self-rising flour (or oat flour)
  • 1/4 cup (45g) mini chocolate chips (dark or sugar-free for lower points)
  • Pinch of salt

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking tray with parchment paper.
  2. In a bowl, whisk yogurt, sweetener, vanilla, and egg until smooth.
  3. Fold in flour and salt until a thick dough forms.
  4. Stir in chocolate chips.
  5. Scoop dough onto baking tray (about 1 tbsp per cookie).
  6. Bake for 9–11 minutes or until lightly golden.
  7. Cool on tray before serving for that soft, moist texture.
