Ingredients

For Pie Crust (double crust)

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (cold, cubed)
  • 1 tsp salt
  • 1 tbsp sugar
  • 6–8 tbsp ice water

For Filling

  • 4 cups mixed berries (blueberries, blackberries, raspberries, strawberries – fresh or frozen)
  • ¾ cup sugar (adjust to taste depending on berry sweetness)
  • ¼ cup cornstarch (or flour, for thickening)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tsp vanilla extract
  • Pinch of salt

For Topping

  • 1 egg (beaten, for egg wash)
  • 2 tbsp coarse sugar (for sprinkling)

Instructions

Step 1 – Make Dough

  1. Mix flour, salt, and sugar in a bowl.
  2. Cut in cold butter until mixture looks crumbly.
  3. Add ice water gradually until dough holds together.
  4. Divide into 2 discs, wrap, and refrigerate 30 minutes.

Step 2 – Prepare Filling

  1. In a large bowl, mix berries, sugar, cornstarch, lemon juice, zest, vanilla, and salt.
  2. Toss gently until coated.

Step 3 – Assemble Pie

  1. Preheat oven to 400°F (200°C).
  2. Roll out one dough disc and place in pie dish.
  3. Pour berry filling evenly inside.
  4. Roll out second disc, place on top, and cut slits (for steam).
  5. Brush with egg wash and sprinkle with coarse sugar.

Step 4 – Bake

  1. Bake at 400°F (200°C) for 20 minutes.
  2. Reduce temperature to 350°F (175°C) and bake 30–40 minutes until golden and bubbly.
  3. Cool at least 2 hours before slicing.
