Ingredients
For Pie Crust (double crust)
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- 1 tsp salt
- 1 tbsp sugar
- 6–8 tbsp ice water
For Filling
- 4 cups mixed berries (blueberries, blackberries, raspberries, strawberries – fresh or frozen)
- ¾ cup sugar (adjust to taste depending on berry sweetness)
- ¼ cup cornstarch (or flour, for thickening)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp vanilla extract
- Pinch of salt
For Topping
- 1 egg (beaten, for egg wash)
- 2 tbsp coarse sugar (for sprinkling)
Instructions
Step 1 – Make Dough
- Mix flour, salt, and sugar in a bowl.
- Cut in cold butter until mixture looks crumbly.
- Add ice water gradually until dough holds together.
- Divide into 2 discs, wrap, and refrigerate 30 minutes.
Step 2 – Prepare Filling
- In a large bowl, mix berries, sugar, cornstarch, lemon juice, zest, vanilla, and salt.
- Toss gently until coated.
Step 3 – Assemble Pie
- Preheat oven to 400°F (200°C).
- Roll out one dough disc and place in pie dish.
- Pour berry filling evenly inside.
- Roll out second disc, place on top, and cut slits (for steam).
- Brush with egg wash and sprinkle with coarse sugar.
Step 4 – Bake
- Bake at 400°F (200°C) for 20 minutes.
- Reduce temperature to 350°F (175°C) and bake 30–40 minutes until golden and bubbly.
- Cool at least 2 hours before slicing.
