INGREDIENTS
  • 3 oz box instant coconut cream pudding mix
  • 2 cups milk
  • 8 oz cream cheese (1 package)
  • 1 cup powdered sugar
  • 8 oz cool whip, thawed
  • ¾ cup coconut flakes
  • ¼ cup toasted coconut flakes
  • Cookies or fruit for serving
PREPARATION
  1. Whisk together the pudding mix and milk in a large bowl until the mixture thickens, about two minutes.
  2. In a separate bowl, mix together the cream cheese and powdered sugar until smooth, then add in the cool whip and stir until fully combined.
  3. Mix the pudding and cream cheese mixtures together and fold in the ¾ cup of coconut flakes.
  4. Transfer to serving dish and refrigerate for a minimum of 30 minutes.
  5. Top with toasted coconut before serving.
