1 cup cottage cheese
2 large eggs
½ cup almond flour (or oat flour for a heartier texture)

1 tsp vanilla extract
1 tsp cinnamon

Instructions
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking dish or line it with parchment paper.
Step 2: Mix the Base
In a bowl, whisk together cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth. Add almond flour, baking powder, cinnamon, nutmeg, and salt. Stir until fully combined.
Step 3: Add Carrots & Nuts
Fold in grated carrots and chopped nuts until evenly distributed.
Step 4: Bake
Pour the batter into the prepared baking dish and smooth the top. Bake for 25–30 minutes, or until set in the center and lightly golden. A toothpick should come out mostly clean.
Step 5: Cool & Serve
