Cottage Cheese & Spinach Crustless Quiche

Light, creamy, and protein-packed, this Cottage Cheese & Spinach Crustless Quiche is a healthy breakfast or brunch favorite that’s gluten-free and easy to make.

Ingredients

1 cup cottage cheese (small-curd)

6 large eggs

1 cup fresh spinach (or 1/2 cup thawed frozen spinach, drained)

1/2 cup shredded mozzarella cheese

1/4 cup grated parmesan cheese

1/2 small onion, chopped

1 clove garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon nutmeg

Instructions

1. Preheat oven to 375°F (190°C). Grease a 9-inch pie dish.

2. Heat olive oil in a skillet and sauté onion for 4 minutes. Add garlic and cook 30 seconds. Add spinach, cook until wilted, and drain well.

3. In a blender, combine cottage cheese, eggs, salt, pepper, and nutmeg. Blend until smooth.

4. In a bowl, mix the spinach mixture with mozzarella and parmesan cheese.

5. Pour the blended egg mixture over and stir gently to combine.

6. Transfer to the prepared pie dish and smooth the top.

7. Bake 35–40 minutes or until golden and set in the center.

8. Cool 10 minutes before slicing. Serve warm or chilled.

Notes

Drain spinach thoroughly to prevent soggy texture.

Blend cottage cheese for a smooth filling.
