Crispy Fried Potatoes & Onions

Ingredients

  • 4–5 medium potatoes, sliced into wedges or thick rounds
  • 1 large onion, thinly sliced
  • 3–4 tbsp oil (olive oil or vegetable oil)
  • 1 tsp paprika (optional but delicious)
  • ½ tsp garlic powder
  • Salt & black pepper to taste
  • Fresh chives or green onions, chopped

Instructions

  1. Prep potatoes:
    Soak sliced potatoes in cold water for 20–30 minutes (this removes starch → extra crisp). Drain and pat very dry.
  2. Fry potatoes:
    Heat oil in a large pan over medium-high heat. Add potatoes in a single layer. Cook undisturbed until golden, then flip and fry until crispy on all sides.
  3. Add onions:
    Push potatoes to the side, add sliced onions. Cook until soft and caramelized, then mix everything together.
  4. Season:
    Sprinkle salt, pepper, paprika, and garlic powder. Toss well and cook 1–2 more minutes.
  5. Finish:
    Remove from heat and garnish generously with chopped chives or green onions.
