Description
Crispy on the outside, buttery and fluffy inside — these roasted smashed potatoes are pure comfort food. Infused with olive oil, garlic, and herbs, they make the perfect side dish for any meal. One bite and you’ll never make potatoes any other way again!
Ingredients
- 2 pounds small potatoes (Yukon Gold or baby red potatoes work best)
- 3 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme (or rosemary, or Italian seasoning)
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
- Optional toppings: grated Parmesan cheese, butter, or chili flakes
Instructions
1. Boil the Potatoes
- Place the small potatoes in a large pot and cover with cold salted water.
- Bring to a boil and cook for 15–20 minutes, until fork-tender but not falling apart.
- Drain well and let them cool for a few minutes on a baking sheet.
2. Preheat the Oven
- Preheat to 425°F (220°C).
- Line a large baking sheet with parchment paper or lightly grease it with oil.
3. Smash the Potatoes
- Arrange the boiled potatoes on the baking sheet.
- Use the bottom of a glass, cup, or potato masher to gently press down each potato until flattened but still holding together (about ½ inch thick).
4. Season and Oil
- In a small bowl, mix olive oil, minced garlic, thyme, salt, and pepper.
- Drizzle or brush the mixture generously over each smashed potato.
- For extra crispiness, make sure the oil coats the tops and edges well.
5. Bake
- Roast in the preheated oven for 25–30 minutes, or until golden brown and crispy around the edges.
- (Optional: Sprinkle Parmesan cheese during the last 5 minutes of baking for a cheesy crust.)
6. Serve
- Transfer to a serving plate and sprinkle with chopped parsley (and extra salt, pepper, or cheese if desired).
- Serve hot and enjoy the crunch!
Tips
- The smaller the potatoes, the crispier they’ll get.
- You can parboil the potatoes ahead of time and roast them later for easy prep.
- Try topping with sour cream, melted butter, or a drizzle of garlic aioli for restaurant-style flavor.
