Crispy Zucchini Garlic Bites

Ingredients

  • 2 cups grated zucchini (about 2 medium), excess moisture squeezed out
  • 1 cup breadcrumbs (plain or seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • ¼ cup finely chopped onion
  • 2 tablespoons chopped fresh parsley (or 1 teaspoon dried)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon Italian seasoning (optional)
  • Cooking spray or olive oil (for baking)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease with cooking spray or oil.
  2. In a large bowl, combine grated zucchini, breadcrumbs, Parmesan, eggs, garlic, onion, parsley, salt, pepper, and Italian seasoning if using. Mix well until fully combined.
  3. Form the mixture into small balls, about 1 to 1½ inches in size. Place them evenly spaced on the prepared baking sheet.
  4. Bake for 20–25 minutes, turning once halfway through, until golden brown and slightly crisp on the outside.
  5. Let cool slightly before serving. Serve warm with marinara sauce, ranch, or your favorite dip.

  • Ensure you remove as much moisture as possible from the zucchini to prevent the bites from becoming soggy.
