Crispy Zucchini Rings

Ingredients :

2 medium zucchinis, sliced into 1/4-inch thick rings

1/2 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (panko for extra crispiness)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Vegetable oil, for frying

Marinara sauce or ranch dressing, for dipping

Instructions :

Prepare the Coating :

In three separate bowls, place flour in the first, beaten eggs in the second, and a mixture of breadcrumbs, Parmesan, garlic powder, salt, and pepper in the third.

Coat the Zucchini :

Dip zucchini slices first in flour, then in eggs, and finally in the breadcrumb mixture. Ensure each slice is evenly coated.

Fry the Zucchini Rings :

Heat oil in a deep pan to 350°F (175°C). Fry zucchini rings in small batches for 2–3 minutes until golden brown and crispy. Remove and drain on paper towels.

Serve :

Serve immediately with marinara sauce or ranch dressing for dipping.
