1. Prepare the Meatloaf Mixture:

In a large bowl, combine:

  • Ground beef
  • Breadcrumbs
  • Parmesan cheese
  • Milk
  • Eggs
  • Worcestershire sauce
  • Salt, pepper, and dry French onion soup mix

Mix until fully combinedβ€”don’t overmix or the loaf will be dense.

2. Shape & Set in Crockpot:

  • Form into a loaf shape and place directly into a greased slow cooker.
  • Optional: Place sliced onions underneath or around the loaf for extra flavor and moisture.

3. Cook Low & Slow:

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until fully cooked through (internal temp should reach 160Β°F / 71Β°C).

4. Add the Cheese:

  • About 15–20 minutes before serving, top the meatloaf with Swiss cheese.
  • Cover and cook until cheese is melted and gooey.

5. Serve:

  • Carefully lift the meatloaf out (use two spatulas or a foil sling).
  • Let rest for 5–10 minutes before slicing. Serve with mashed potatoes, green beans, or a crusty roll.
