Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- Β½ cup grated Parmesan cheese
- ΒΌ cup milk
- 2 eggs
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- Β½ teaspoon black pepper
- 1 packet (1 oz) dry French onion soup mix
- 1 large onion, thinly sliced (optional, for layering under/around)
- 1β1Β½ cups shredded Swiss cheese (or slices)
π Instructions
1. Prepare the Meatloaf Mixture:
In a large bowl, combine:
- Ground beef
- Breadcrumbs
- Parmesan cheese
- Milk
- Eggs
- Worcestershire sauce
- Salt, pepper, and dry French onion soup mix
Mix until fully combinedβdonβt overmix or the loaf will be dense.
2. Shape & Set in Crockpot:
- Form into a loaf shape and place directly into a greased slow cooker.
- Optional: Place sliced onions underneath or around the loaf for extra flavor and moisture.
3. Cook Low & Slow:
- Cover and cook on LOW for 6β7 hours or HIGH for 3β4 hours, until fully cooked through (internal temp should reach 160Β°F / 71Β°C).
4. Add the Cheese:
- About 15β20 minutes before serving, top the meatloaf with Swiss cheese.
- Cover and cook until cheese is melted and gooey.
5. Serve:
- Carefully lift the meatloaf out (use two spatulas or a foil sling).
- Let rest for 5β10 minutes before slicing. Serve with mashed potatoes, green beans, or a crusty roll.
