Crockpot Marry Me Chicken Orzo Soup
A comforting and hearty soup that combines tender chicken, orzo pasta, and fresh vegetables, perfect for a cozy dinner or meal prep.
Ingredients:
Base
1 tbsp olive oil
1 ½ lbs boneless, skinless chicken breasts (or thighs for extra flavor)
1 small onion, diced
2 cloves garlic, minced
1 large carrot, diced
2 ribs celery, diced
Liquids & Pasta
1 (14.5 oz) can diced tomatoes, undrained
4 cups chicken broth
1 cup orzo pasta
Seasoning
1 tsp dried oregano
1 tsp dried basil
½ tsp red pepper flakes (optional, for heat)
Salt and pepper, to taste
Finish & Garnish
2 cups fresh spinach, roughly chopped
Freshly grated Parmesan cheese, for garnish
Directions:
1. Prepare the Base: In a large skillet, heat the olive oil over medium heat. Add the diced onion, garlic, carrot, and celery. Sauté for about 5 minutes, until the vegetables are softened.
2. Add Chicken: Transfer the sautéed vegetables to the crockpot. Place the chicken breasts (or thighs) on top of the vegetables.
3. Add Liquids: Pour in the diced tomatoes (with their juice) and chicken broth. Stir to combine.
4. Season: Sprinkle the oregano, basil, red pepper flakes (if using), salt, and pepper over the mixture.
5. Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is cooked through and tender.
6. Add Orzo: About 30 minutes before serving, stir in the orzo pasta. Cover and continue to cook until the orzo is tender.
7. Finish & Garnish: Once the orzo is cooked, stir in the fresh spinach until wilted. Serve hot, garnished with freshly grated Parmesan cheese.
