Crispy, cheesy, garlicky, and totally irresistible. These baked zucchini fries turn a simple veggie into the perfect snack or side dish!


Ingredients

  • 2 medium zucchinis, cut into fries
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1/2 tsp paprika (optional but adds great color)
  • Salt & pepper to taste
  • 2 eggs, beaten
  • Optional: fresh parsley for garnish, marinara or ranch for dipping

🔥 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine panko, Parmesan, garlic powder, paprika, salt, and pepper.
  3. Dip each zucchini fry into the beaten eggs, then roll in the breadcrumb mixture to coat.
  4. Arrange zucchini sticks in a single layer on the baking sheet.
  5. Bake for 18–22 minutes, flipping halfway, until golden and crispy.
  6. Serve warm with your favorite dipping sauce.
