✅ Ingredients
- 1 tbsp oil (olive or avocado)
- 1 small onion, diced
- 1/2 bell pepper, diced
- 2 cups fresh baby spinach, chopped
- 1 1/2 cups cottage cheese
- 4 large eggs
- 1 cup shredded cheddar cheese
- 1/2 cup milk
- 1/2 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
🍽️ Instructions
1. Preheat Oven
Preheat your oven to 375°F (190°C). Grease a pie dish or 8×8 baking dish.
2. Sauté Vegetables
- Heat 1 tbsp oil in a pan.
- Add the onion and bell pepper; cook 3–4 minutes until softened.
- Add chopped spinach; cook 1–2 minutes until wilted.
- Remove from heat.
3. Mix the Filling
In a large bowl, whisk together:
- Eggs
- Cottage cheese
- Milk
- Garlic powder
- Italian seasoning
- Salt & pepper
Stir in the shredded cheddar cheese.
4. Combine
- Add the sautéed vegetables into the egg mixture.
- Mix until everything is evenly combined.
5. Bake
- Pour the mixture into your greased dish.
- Bake 35–40 minutes or until the center is set and the top is lightly golden.
6. Cool & Serve
Let cool for 5–10 minutes so it slices nicely.
