Ingredients

  • 1 tbsp oil (olive or avocado)
  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

🍽️ Instructions

1. Preheat Oven

Preheat your oven to 375°F (190°C). Grease a pie dish or 8×8 baking dish.

2. Sauté Vegetables

  • Heat 1 tbsp oil in a pan.
  • Add the onion and bell pepper; cook 3–4 minutes until softened.
  • Add chopped spinach; cook 1–2 minutes until wilted.
  • Remove from heat.

3. Mix the Filling

In a large bowl, whisk together:

  • Eggs
  • Cottage cheese
  • Milk
  • Garlic powder
  • Italian seasoning
  • Salt & pepper

Stir in the shredded cheddar cheese.

4. Combine

  • Add the sautéed vegetables into the egg mixture.
  • Mix until everything is evenly combined.

5. Bake

  • Pour the mixture into your greased dish.
  • Bake 35–40 minutes or until the center is set and the top is lightly golden.

6. Cool & Serve

Let cool for 5–10 minutes so it slices nicely.
