Ingredients:
- 4 slices of whole-grain bread (choose a low-point option)
- 4 oz (about 4 slices) of lean turkey breast
- 4 tbsp light cream cheese (low-fat or reduced-fat)
- 1 small cucumber, thinly sliced
- 1/4 red onion, thinly sliced
- 1/2 tsp dried dill (or fresh dill if available)
- Salt and pepper to taste
- Optional: lettuce leaves, tomato slices, or any other low-point veggies you like
Instructions:
- Start by spreading 1 tablespoon of light cream cheese onto each slice of whole-grain bread.
- Lay out the turkey slices evenly on two of the bread slices.
- Layer the thinly sliced cucumber and red onion on top of the turkey.
- Sprinkle the dill, salt, and pepper on top of the veggies for added flavor.
- If you want to include lettuce or tomato, add those on top of the cucumber and red onion.
- Top each sandwich with the remaining bread slices, cream cheese side down.
- Cut the sandwiches in half, if desired, and serve immediately.
