Ingredients
For the Crust:
- 2 cups (200g) chocolate cookie crumbs (like Oreos or chocolate graham crackers)
- ¼ cup (55g) melted butter
- 2 tbsp granulated sugar
For the Cheesecake Filling:
- 24 oz (680g) cream cheese, softened
- 1 cup (200g) granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 cup (170g) semi-sweet or dark chocolate, melted and slightly cooled
- ½ cup (120ml) heavy cream
For the Ganache Topping:
- ½ cup (120ml) heavy cream
- 4 oz (113g) semi-sweet or dark chocolate, finely chopped
Optional Garnishes:
- Chocolate shavings, curls, or chips
- Whipped cream
- Fresh berries (like raspberries or strawberries)

1. Prepare the Crust:
- Preheat oven to 325°F (160°C).
- In a bowl, mix the cookie crumbs, melted butter, and sugar until evenly combined.
- Press the mixture into the bottom of a 9-inch (23 cm) springform pan.
- Bake for 10 minutes, then remove and set aside to cool.
2. Make the Cheesecake Filling:
- In a large bowl, beat the cream cheese until smooth and creamy.
- Add sugar and beat again until well combined.
- Add eggs one at a time, mixing after each.
- Mix in vanilla and melted chocolate until smooth.
- Pour in the heavy cream and mix until just combined.
3. Bake the Cheesecake:
- Pour the filling over the cooled crust.
- Place the pan in a water bath (wrap the outside in foil and place in a larger pan filled with hot water).
- Bake at 325°F (160°C) for 55–65 minutes, or until edges are set and the center is slightly jiggly.
- Turn off the oven, crack the door, and let it cool for 1 hour. Then transfer to the fridge to chill for at least 6 hours or overnight.
4. Make the Ganache Topping:
- Heat the cream in a saucepan or microwave until just simmering.
- Pour over the chopped chocolate and let sit 1 minute. Stir until smooth.
- Pour the ganache over the chilled cheesecake and spread evenly.
- Chill for at least 30 more minutes to set the topping.
5. Garnish & Serve:
- Top with chocolate shavings, whipped cream, or berries.
- Slice with a hot knife (run it under hot water and wipe clean between cuts) for clean, sharp slices.
