Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 carrot, diced
- 1 cup corn kernels (fresh or frozen)
- 1 can black beans, rinsed
- 1 can diced tomatoes (with juice)
- 4 cups vegetable or chicken broth
- 1 tsp cumin powder
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp black pepper
- Salt to taste
- Juice of 1 lime
- Fresh coriander or parsley for garnish
🥣 Instructions

Sauté base
Heat olive oil in a pot. Cook onion 3–4 minutes, then add garlic and bell pepper. -
Add veggies
Stir in zucchini, carrot, and corn. Cook 3 minutes. -
Add beans & tomatoes
Add black beans, diced tomatoes, broth, and all spices. -
Simmer
Cover and cook 20–25 minutes until veggies are tender. -
Finish
Add lime juice. Taste and adjust salt/spice. -
Serve
Top with fresh coriander, avocado slices, or a spoon of yogurt.
